Answer for laymen, simple and short: Entropy is the measure of the disorder, which means that the higher is Entropy, the higher is the disorder, in any system, Universe included. By the second principle of thermodynamic, Entropy increases constantly in every spontaneous process.
Example: if thou drop a bottle of ink on the floor, it is impossible that the ink organizes spontaneously itself composing a poem, as well as in the Universe it is impossible a spontaneous organization of elementary particles, like Bosons, Fermions etc. to form the organism of an animal, let alone a human being.
In short: Atheism violates the second principle of thermodynamic.

I always thought that philosophy was one of Rossi's true strengths, especially given his academic background in erudite philosophy BS.
In this case he is scientifically wrong. Confusing an anthropomorphic idea of complexity with entropy. Thus, the early universe was very low entropy because high temperature. After cooling the metastable H and He can fuse to more tightly bound elements releasing large amounts of energy, and this can drive entropy increase throughout the universe. Complex animals do not have lower entropy than the pre-animal state with a sun slightly less mature in its progression towards becoming a red giant.
On a similar point - evolution drives complexity but does not break thermodynamics because the living organisms use low entropy energy of one sort or another
